Sweetbreads, Browned

Ingredients

Directions

Prepare the sweetbreads

  1. Soak, blanch, and stew the sweetbreads in enough good stock to barely cover them for about 30 minutes.

  2. Remove the sweetbreads and place them in a round saucepan with a slice of melted butter that is just beginning to brown.

  3. Turn the sweetbreads until they are evenly browned on all sides and keep them warm by the stove.

Make the sauce and serve

  1. Thicken the stock used for boiling with brown thickening, then flavor with mushroom ketchup and lemon juice, and add 1 tablespoon of light wine.

  2. Place the sweetbreads on a dish, pour the sauce over them, and garnish with toasted sippets or other suitable accompaniments.

What each ingredient does

Sweetbreads
Main protein; soaking, blanching and stewing firm it and make it tender.
Fresh butter
Browns in the pan, adding a nutty flavor and golden color to the sweetbreads.
Brown thickening
Thickens the stock into a sauce that clings to the sweetbreads.
Mushroom ketchup
Adds savory, umami depth to the sauce.
Lemon juice
Adds acidity that brightens the rich sauce and butter.

The step that matters

Browning the sweetbreads in butter. The butter must be just beginning to brown and the sweetbreads turned often. Too hot or too long and the butter burns and bitter flavors develop; too cool and the surface steams instead of browning, through Maillard reactions that need dry, moderately high heat.
