What each ingredient does

Tripe
Forms the main body of the stew, becoming tender through long, gentle simmering.
Lean beef
Adds meaty flavour and substance to the stew during the long simmer.
Cornflour
Thickens the cooking liquid into a smooth sauce when boiled with it.

The step that matters

Skimming after the boil. Skimming removes foam and loose fat that rise as the liquid first heats, keeping the sauce clear and clean-tasting over the long simmer.

Swap the mustard

How well each one fits the dish's main ingredients (beef, sugar):

  1. Capsicumfits better
  2. Potatofits better
  3. Tomatofits about as well
  4. Mustardthe original

Fit is the average pairing score against beef, sugar. Candidates are from the same food group and used in at least 100 recipes.
