Ingredients

Directions

Cook the tripe

  1. Cut the tripe into convenient-sized pieces.

  2. Place the tripe in a stewpan and cover it with strong veal broth.

  3. Simmer gently for four hours.

Make the sauce

  1. In another stewpan, combine mushrooms, parsley, shallot, bay leaf, pepper, and salt.

  2. Pour in the white sauce and stir over gentle heat until the vegetables are tender.

  3. Add enough veal broth to achieve a sauce consistency similar to melted butter.

  4. Boil gently until the sauce is very smooth.

Serve

  1. Serve the tripe in a deep dish with the sauce poured over it.

What each ingredient does

Fresh white tripe
Forms the main body of the dish and becomes tender through long, gentle simmering.
White sauce
Provides a smooth, creamy coating that carries the flavour over the tripe.
Veal broth
Cooks the tripe and thins the sauce to a smooth, buttery consistency.
Mushrooms
Add earthy savour and moisture to the sauce as they soften.

The step that matters

Boil the sauce gently until very smooth. Boiling too hard can cause the flour-thickened white sauce to break, separate or turn lumpy. A gentle heat lets the starch hydrate and the sauce settle into an even, silky texture.

Swap the parsley

How well each one fits the dish's main ingredients (veal, mushroom, shallot, pepper, sauce):

  1. Capersfits better
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Thymefits about as well

Fit is the average pairing score against veal, mushroom, shallot, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
