What each ingredient does

Turkey pinions
Provide the meat that becomes tender during slow stewing.
Flour
Dusted on the browned wings to thicken the stock into a sauce.
Butter
Browns the wings and onions, adding richness and savoury flavour.
Stock
Forms the liquid that gently cooks the wings and becomes the sauce.
Capers
Add a sharp, briny acidity that cuts through the rich sauce.

The step that matters

Simmer gently for an hour. A gentle simmer lets the connective tissue in the wings break down slowly. A hard boil toughens the meat and can reduce the sauce too quickly or make it cloudy.
