Turkey, Truffled Economically

Ingredients

Directions

Prepare the truffles

  1. Wash, scrub and drain the truffles, then dry them.

  2. Cut the truffles into thin slices without peeling.

Prepare the chestnuts

  1. Boil or roast chestnuts, making a small cut in the skin of each chestnut to prevent bursting.

  2. Boil the chestnuts in slightly salted water until tender, about 30 to 60 minutes.

  3. Skin the chestnuts.

  4. Mix the chestnuts with the sliced truffles.

Stuff and roast

  1. Let the turkey hang in a cool, airy place for 2 to 3 days.

  2. Fill the body of the turkey with the chestnut and truffle mixture.

  3. Fill the crop of the turkey with good veal forcemeat.

  4. Truss the turkey firmly.

  5. Tie a buttered paper over the breast.

  6. Roast the turkey before a clear fire, starting at a distance from the heat.

  7. Baste the turkey liberally.

What each ingredient does

Truffles
Provide the dish's main aroma and flavour through thin slices throughout the stuffing.
Chestnuts
Fill the body with a soft, starchy texture that absorbs the truffle flavour.
Good veal forcemeat
Fills the crop with a rich, moist, savoury stuffing that keeps the bird juicy.
Butter
Lightly coats the paper tied over the breast, helping protect the meat from drying and scorching.

The step that matters

Roast the turkey starting at a distance from the heat. Starting farther from a fierce fire lets the large bird cook through gently, so the outside does not brown or burn before the inside is done.

Swap the chestnut

How well each one fits the dish's main ingredients (turkey, truffle, veal, butter):

  1. Chestnutthe original
  2. Peasfits about as well
  3. Walnutfits less well
  4. Pistachiofits less well

Fit is the average pairing score against turkey, truffle, veal, butter. Candidates are from the same food group and used in at least 100 recipes.
