Veal Brawn

Ingredients

Directions

Cook the veal

  1. Boil the knuckle of veal with the onion, turnip, and celery for 3 hours until tender.

  2. Remove all bones and cut the meat into small pieces.

  3. Season the meat with pepper, coarse sea salt, and sage.

Set and serve

  1. Transfer the seasoned meat into a cake tin, reserving most of the cooking liquid.

  2. Let it cool until firmly set, then turn it out of the tin.

  3. Simmer the bones and remaining stock with the vegetables for several hours to make an excellent stock.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Provides the meat and natural gelatin that set the brawn as it cools.
Cooking liquid (in the method)
Carries collagen and flavor from the bones, which gels into the set brawn.
Celery
Adds aromatic flavor to the cooking liquid during the long boil.

The step that matters

Let it cool until firmly set. Brawn holds together only because collagen from the bones and connective tissue dissolves during boiling and gels as it cools. Turning it out too early, before it is fully set, can cause it to collapse or crumble.

Swap the onion

How well each one fits the dish's main ingredients (veal, turnip, celery, pepper, sage):
