Veal, Breast Of, Rolled and Braised

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Spread forcemeat on the boned breast of veal and roll it tightly.

  2. Bind the rolled veal securely with kitchen twine.

  3. Surround the rolled veal with slices of fat bacon.

  4. Place the rolled veal in a stewpan just large enough to hold it.

  5. Add the carrot, onion, peppercorns, mace, and sweet herbs to the pan.

  6. Pour in 2 to 3 cups of stock.

Braise

  1. Cover the pan and simmer gently over low heat for 3 hours, basting frequently.

  2. After 3 hours, remove the veal and place it on a dish.

Glaze and serve

  1. Preheat the oven to 300°F (150°C).

  2. Strain the cooking liquid.

  3. Boil it quickly until it thickens.

  4. Brush the veal with the thickened liquid 2 to 3 times.

  5. Garnish with forcemeat balls, bacon rashers, or dressed vegetables.

  6. Serve with white sauce, Italian sauce, melted butter, parsley sauce, or mushroom sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Forms the main meat that becomes tender and juicy during slow simmering.
Forcemeat
Adds moisture and flavour inside the roll as it cooks.
Fat bacon slices
Bastes the veal with melting fat, adding richness and savoury flavour.
Stock
Provides the braising liquid that gently cooks the meat and becomes the glaze.
Carrot
Adds sweetness and aroma to the braising liquid.

The step that matters

Simmering gently over low heat. A gentle simmer keeps the connective tissue in the veal breaking down slowly into tender meat. Boiling hard toughens the muscle fibres and can dry the surface, so keep the liquid barely moving.

Swap the mace

How well each one fits the dish's main ingredients (veal, spread, carrot, onion, clove):

  1. Celeryfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against veal, spread, carrot, onion, clove. Candidates are from the same food group and used in at least 100 recipes.
