Ingredients

Directions

Prepare

  1. Raise the thick part of the veal with your fingers and fill the cavity with as much veal stuffing as possible.

  2. Bring the edges of the meat together and sew them with twine or fasten with skewers to prevent the stuffing from escaping.

Roast and serve

  1. Place the veal at a moderate distance from a clear fire and baste it liberally.

  2. Roast for 1 hour and 45 minutes.

  3. Once done, pour melted butter over the veal and serve with fried bacon rashers.

What each ingredient does

Veal breast
Forms the main body of the dish, cooking slowly to tender, juicy meat.
Veal stuffing
Fills the cavity, adding moisture and flavour to the meat as it roasts.
Melted butter
Adds richness and a glossy finish when poured over the cooked veal.
Fried bacon rashers
Contribute salty, smoky fat that complements the mild veal.

The step that matters

Sewing or skewering the edges. If the edges are not closed tightly, the stuffing can escape during roasting, leaving the meat dry and unevenly cooked around an exposed cavity.
