Veal Cones

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mince the veal with a little ham or tongue and form it into a paste. Moisten the paste with cream or stock if desired.

  2. Shape the paste into cones about three inches high.

  3. Brush the cones with beaten egg and dredge with bread crumbs.

  4. Fry the cones in hot fat until brightly browned, or bake in a 400°F (200°C) oven.

  5. Place a layer of fried bread crumbs in a dish, arrange the cones on top, and serve with tartar sauce or brown sauce.
