Veal Cutlets

Ingredients

Directions

  1. Flatten the veal cutlets with a meat mallet.

  2. Sprinkle salt and pepper on both sides.

  3. Fry the cutlets in butter or lard for 6 minutes on each side.

  4. Drain the cutlets and let them cool.

  5. Cut stiff paper to the shape of the cutlets, leaving a wide margin for folding.

  6. Oil the paper, place a slice of bacon, a spoonful of sauce, the cutlet, another spoonful of sauce, and another slice of bacon on it.

  7. Fold the edges of the paper to seal in the sauce.

  8. When ready to serve, broil the wrapped cutlets over a slow fire, turning them to cook evenly.

  9. Serve the cutlets on a dish in the paper.
