Veal Cutlets, Gravy for

Ingredients

Directions

  1. Place the bones and trimmings of veal in a saucepan and barely cover with cold water.

  2. Add parsley, thyme or marjoram, lemon rind, mace, and pepper.

  3. Cover and simmer gently until the stock is strong and flavorful.

  4. Strain the stock and thicken it with brown thickening.

  5. Simmer the thickened stock until it separates from the grease.

  6. If cutlets are fried, remove them from the pan and pour off the fat, leaving the brown gravy.

  7. Pour the thickened sauce over the gravy, stir well, and boil for a few minutes.

  8. Add salt if needed, then strain the sauce over the meat.

  9. Optionally, stir in a few spoonfuls of cream before serving.
