Veal, Galantine of

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the roast veal and ham into neat thin slices.

  2. Line an earthenware mold with thin slices of fat bacon.

  3. Layer the ham and veal in the mold, interspersing with slices of hard-boiled egg yolks.

  4. Sprinkle each layer with coarse sea salt, white pepper, finely-shredded parsley, and small pieces of truffles if available.

  5. Pour clarified butter over the layers.

  6. Cover the top of the mold tightly with three or four folds of paper.

  7. Bake in a moderate oven at 350°F (175°C) for one hour.

  8. Let it cool, then turn it out to serve.
