Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Season the veal pieces with salt, pepper, and mace.

  2. Line a small dish with veal caul, leaving excess skin hanging over the sides.

  3. Layer the dish with bacon, veal, and forcemeat, starting and ending with bacon.

  4. Add minced mushrooms and herbs if desired.

  5. Fasten the caul over the meat and cover with three or four folds of paper.

  6. Bake in a preheated oven at 350°F (175°C) for about one hour.

  7. Turn the dish onto a plate and serve with plenty of brown gravy.
