Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Use any part of lean veal, such as the loin or neck, after removing fat and bone.

  2. For tougher cuts like knuckle, leg, breast, or shoulder, partially stew them before adding to the pie.

  3. Combine veal with optional ingredients like ham, forcemeat balls, hard-boiled eggs, sweetbreads, oysters, mushrooms, or truffles.

  4. Prepare a pie crust and fill it with the veal mixture.

  5. Cover with another layer of crust and seal the edges.

  6. Bake in a moderate oven at 350°F (175°C) until golden brown.
