Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat your oven to 350°F (175°C).
Cover the joint of veal with oiled or buttered paper.
Roast the veal close to a clear fire for 20 minutes.
After 20 minutes, reduce the heat and roast slowly until fully cooked.
Baste the veal with good dripping every 15 minutes.
Twenty minutes before removing from the oven, take off the paper and sprinkle flour over the joint.
Baste with melted fresh butter using a spoon.
Sprinkle a little coarse sea salt over the veal 5 minutes before serving.
Serve with forcemeat balls, ham, bacon, tongue, or pickled pork.
Pour a little brown gravy over the joint and serve more in a tureen.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
