Vinegar, Sugar

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Boil water and sugar for 30 minutes, skimming if necessary.

  2. Cool the mixture in an earthen vessel until lukewarm.

  3. Spread yeast thickly on both sides of the bread slice and add it to the cooled mixture.

  4. Ferment for 2 days.

  5. Pour the mixture into a clean barrel rinsed with vinegar.

  6. Cover the bung-hole with brown paper and poke small air holes with a fork.

  7. Place the barrel in a dry, warm location.
