Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Sift powdered sugar and flour together in a bowl.

  2. Add salt and caraway seeds, and mix well.

  3. Beat the egg white with a little cold water and combine with the dry ingredients.

Shape and bake

  1. Roll the mixture thin and stamp into small rounds with a cutter.

  2. Prick holes in each round with a fork.

  3. Bake on tins in a 400°F (200°C) oven until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Adds sweetness and a fine, tender texture to the dough.
Fine flour
Provides the structure that holds the thin rounds together when baked.
Egg white
Binds the dry ingredients and helps the cakes set firm in the oven.

The step that matters

Rolling the mixture thin. Thin rounds bake through and dry out to a crisp texture; thick pieces stay soft in the centre and may not cook evenly.

Swap the caraway

How well each one fits the dish's main ingredients (sugar, flour, egg):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegfits better
  4. Carawaythe original

Fit is the average pairing score against sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
