Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meat body and firm, savoury bulk of the sausage.
Cow's udder fat
Adds richness and moisture, keeping the cooked sausage juicy rather than dry.
Bread crumbs
Soaked in soup, they absorb liquid and help bind the filling with a softer texture.

The step that matters

Parboil the filled entrails, then smoke them until they are yellowish. Parboiling cooks the filling through before smoking, while smoke colours and flavours the casing. Skipping or rushing the parboil can leave the centre underdone, and the smoking step alone will not cook the meat fully.

Swap the clove

How well each one fits the dish's main ingredients (beef, bread, pepper):

  1. Marjoramfits better
  2. Parsleyfits better
  3. Celeryfits better
  4. Clovethe original

Fit is the average pairing score against beef, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
