Why it works: Clove and lemon match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 8,150 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Wine, Birch
Ingredients
Directions
Collect the sap
Bore a hole in each birch tree about 1 foot from the ground and insert a faucet to collect sap.
Place a vessel to catch the sap as it flows for several days, then stop the hole with a peg.
Make the wine
In a pot, combine the birch sap, honey (or sugar), hops, cloves, and lemon rinds.
Boil the mixture while stirring.
Add yeast to the mixture and ferment.
Transfer the mixture to a cask and refine with isinglass.
Bottle the wine after about 2 months; it will be ready to use in another 2 months.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Birch sap
- Forms the liquid base that the fermentation turns into wine.
- Honey or sugar
- Provides the sugar that yeast ferments into alcohol, and sweetness.
- Hops
- Adds bitterness that balances the sweetness and helps preserve the wine.
- Yeast
- Ferments the sugars into alcohol and carbon dioxide.
- Isinglass
- Fines the wine, helping suspended particles settle out for clarity.
Swap the lemon
How well each one fits the dish's main ingredients (honey, hops, clove):

Fit is the average pairing score against honey, hops, clove. Candidates are from the same food group and used in at least 100 recipes.
