What each ingredient does

Beef
Breaks down slowly into gelatin during long simmering, giving the broth body and a rich savoury flavour.
Veal
Its collagen turns to gelatin during simmering, adding body and a light, rounded meatiness to the broth.
Mutton
Releases fat and gelatin into the broth during simmering, adding richness and a deeper meat flavour.
Old cock
A tough, mature bird whose collagen dissolves into gelatin, thickening the broth and deepening its flavour.
Ox's palate
Boiled until tender, it contributes a soft, gelatinous texture to the soup.
Truffles
Contribute a strong, earthy aroma that perfumes the finished soup.

The step that matters

Keep the soup at a gentle simmer. A rolling boil emulsifies fat and fine particles into the liquid, making the broth cloudy, and it can toughen meat. Gentle heat lets collagen dissolve slowly while the broth stays clear.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, veal, mutton, carrot, onion, pepper, mace):

  1. Parsleyfits better
  2. Celeryfits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against beef, veal, mutton, carrot, onion, pepper, mace. Candidates are from the same food group and used in at least 100 recipes.
