Canning and Preserving
Ingredients
Directions
Fill jars with fruit.
Pour in enough water to fill the jars.
Adjust the rubber seals and lay the lids on top without fastening.
Place jars in a wash boiler on a rack.
Surround jars with cold water and cover the boiler.
Bring to a boil and cook strawberries, blackberries, raspberries, and currants for 20 minutes; cherries for 45 minutes; pineapples and peaches for 30 minutes.
For strawberries and raspberries, fill jars with fruit, bring to a boil, and when the fruit settles, fill two jars from a third.
Return jars to the boiler and cook for an additional 5-10 minutes.
Screw on the lids tightly, wipe the jars, and store in a cool place out of drafts.
The next morning, check and tighten each lid.
