Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Sheepshead with Drawn Butter

Ingredients

Directions

Steam the fish

  1. Clean the fish thoroughly and rub a little coarse sea salt over it.

  2. Wrap the fish in a cloth and place it in a steamer over a pot of fast-boiling water.

  3. Steam the fish for one hour.

  4. Transfer the fish to a hot serving dish and garnish with parsley tufts and lemon slices.

Make the drawn butter

  1. For the drawn butter, roll the butter into small balls and dredge them with flour.

  2. In a saucepan, melt one-fourth of the butter balls while whisking.

  3. Add the remaining butter balls one at a time until the mixture is smooth.

  4. Stir in the lemon juice and chopped parsley.

  5. Pour the sauce into a hot sauce boat and serve with the fish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sheepshead fish
Provides the main body of the dish, cooked gently by steam until flaky.
Butter
Forms the rich, smooth base of the sauce and carries its flavour.
Flour
Coats the butter balls so they melt smoothly and help thicken the sauce.
Lemon juice
Adds acidity that brightens the rich butter and balances its richness.

The step that matters

Adding the butter balls to the saucepan. Adding butter too fast or over high heat can split the emulsion, leaving a greasy, grainy sauce. Adding the flour-dusted balls gradually while whisking lets them melt evenly and thicken the sauce into a smooth, cohesive emulsion.
