What each ingredient does

Egg yolks
Emulsify the oil and vinegar, giving the dressing a smooth, thick body.
Salad oil or butter
Adds fat and richness, giving the dressing its creamy texture.
Vinegar
Adds acidity that sharpens the flavor and balances the rich dressing.
Raw egg white
Whipped to a froth, it lightens the dressing and adds airiness.
Mustard
Helps stabilize the emulsion and adds a sharp, savory bite.

The step that matters

Gently stir in the frothed egg white. Folding rather than beating keeps the air bubbles from the frothed white intact, so the dressing stays light instead of deflating.

Swap the lettuce
