Clam Chowder

Ingredients

Directions

Prepare the clams

  1. Wash the clams thoroughly and place them in a pot with ½ pint of water.

  2. Cook until the shells open.

  3. Remove the clams from the shells, chop them finely, and save the clam water.

Make the base

  1. In a frying pan, gently fry the salt pork until browned.

  2. Remove the pork scraps.

  3. Add the chopped onions to the pan and fry delicately.

Cook and finish the chowder

  1. In a clean chowder kettle, add 1 quart of hot water, the clams, clam water, and pork scraps.

  2. Once boiling, add the potatoes.

  3. Cook the potatoes until tender.

  4. Just before serving, thicken the chowder with 1 cup of powdered crackers.

  5. Stir in 1 quart of fresh milk.

  6. If the chowder is too rich, add more water.

  7. Season with black pepper.

  8. For extra flavor, add sliced tomatoes if desired.

What each ingredient does

Clams
Provide the main seafood flavor and body of the chowder.
Salt pork
Renders fat and browned flavor that carries through the chowder.
Potatoes
Soften during cooking and thicken the chowder with their starch.
Powdered crackers
Thicken the chowder just before serving.
Milk
Adds creaminess and richness to the broth.

The step that matters

Thickening with powdered crackers. Crackers absorb liquid and swell quickly, so adding them just before serving at a steady simmer avoids a pasty or lumpy texture. Stir them in gradually while the chowder is hot.

Swap the tomato

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (clam, pork, onion, potato, milk, pepper):

  1. Capsicumfits better
  2. Tomatothe original
  3. Asparagusfits about as well
  4. Carrotfits about as well

Fit is the average pairing score against clam, pork, onion, potato, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
