Roast Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the chicken thoroughly in two or three waters, adding baking soda to the second wash to ensure freshness.

  2. Dry the chicken with a clean cloth and fill the cavity with stuffing.

  3. Place the chicken in a roasting pan with hot water and 1 tablespoon of butter.

  4. Season the chicken with salt and pepper.

Roast

  1. Roast the chicken at 400°F (200°C), basting frequently.

  2. When nearly done, add the remaining butter to the pan and baste again.

  3. Dredge a little flour over the chicken.

  4. Baste once more and finish roasting for about 30 minutes.

Make the gravy and serve

  1. Simmer the giblets in a small amount of water, strain, and mix with the drippings from the chicken.

  2. Thicken the gravy with browned flour and add chopped giblets.

  3. Serve the chicken with the gravy and cranberry sauce or tart sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole chicken
Forms the main body of the dish, providing the meat that is roasted and served.
Butter
Adds fat for richness and helps the skin brown as it roasts.
Flour
Dredged over the chicken and browned, it thickens the gravy.
Giblets
Simmered and chopped into the gravy, they add savory flavor and body.

The step that matters

Baste once more and finish roasting for about 30 minutes. Basting repeatedly moves fat and juices over the surface, which promotes even browning and keeps the skin from drying out before the meat is cooked through.
