Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Prepare the chicken by stewing it until tender and seasoning it.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

  3. Line a 4 or 6-quart pudding dish with biscuit dough, about ¼ inch thick.

  4. Layer part of the chicken in the dish, adding butter, salt, and pepper as needed.

  5. Add sliced cold boiled eggs and the remaining chicken, seasoning again.

  6. If using, add new potatoes.

  7. Pour enough gravy over the mixture to fill the dish.

Bake and serve

  1. Cover with a ¼ inch thick crust, making a hole in the center the size of a teacup.

  2. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  3. Garnish with small celery leaves arranged in a circle.

What each ingredient does

Chicken
Provides the main protein and body of the filling, becoming tender when stewed.
Cold boiled eggs
Adds firm, sliced texture and richness to the filling.
Rich baking powder or soda biscuit dough
Forms the crust that bakes into a light, tender layer over the filling.
Gravy from the chicken
Adds moisture so the filling stays juicy rather than dry during baking.
Butter
Adds fat and richness to the chicken layers.

The step that matters

Pour enough gravy over the mixture to fill the dish. Gravy supplies the moisture that keeps the filling juicy during baking. Too little leaves the chicken and eggs dry, while the crust needs enough liquid beneath it to bake through without drying.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, pepper, butter, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, pepper, butter, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
