Scalloped Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken and gravy

  1. Boil the chicken joints in water until the meat easily separates from the bone.

  2. Remove the bones and chop the chicken into small pieces.

  3. Thicken the boiling water with flour and season with butter and salt.

Assemble and bake

  1. In a deep dish, layer bread crumbs, chicken, and potato slices, finishing with a layer of bread crumbs on top.

  2. Pour the gravy over the layers and add a few bits of butter on top.

  3. Bake at 400°F (200°C) until nicely browned.

  4. Serve garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and savory meat that forms the body of the dish.
All-purpose flour
Thickens the boiling water into a gravy that moistens the layers.
Bread crumbs
Form the layers that soak up the gravy and brown on top in the oven.
Potatoes
Add starch and body, becoming tender and absorbing gravy as they bake.
Butter
Adds richness and fat, helping the top brown and the gravy taste rounded.

The step that matters

Thicken the boiling water with flour. Flour must be whisked into the liquid while it simmers so it hydrates evenly and thickens without lumps. Lumps or thin gravy will leave the layers soggy or uneven after baking.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, flour, butter, bread, potato):

  1. Garlicfits about as well
  2. Thymefits about as well
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against chicken, flour, butter, bread, potato. Candidates are from the same food group and used in at least 100 recipes.
