What each ingredient does

Young ducks
Provide the main meat, which becomes tender through slow, moist simmering.
Bacon
Adds fat and smoky savour to the braising liquid.
White wine
Adds acidity that brightens the braising liquid and gravy.
Turnip
Browning in butter adds flavour before it is braised until tender.
Carrot
Adds sweetness and body to the braising liquid.

The step that matters

Simmer over gentle heat, basting frequently. A gentle simmer lets the connective tissue in the duck break down slowly, giving tender meat. A rapid boil toughens the meat and dries the skin, so keep the liquid barely moving.

Swap the onion

How well each one fits the dish's main ingredients (carrot, clove, thyme, parsley, pepper, white wine, butter):

  1. Shallotfits better

  3. Leekfits better

Fit is the average pairing score against carrot, clove, thyme, parsley, pepper, white wine, butter. Candidates are from the same food group and used in at least 100 recipes.
