What each ingredient does

Lean beef
Forms the meat itself, whose firm texture is set by curing and drying.
Salt
Draws moisture out of the meat and seasons it while helping preserve it.
Saltpetre
Helps preserve the meat and gives cured meat its characteristic colour and flavour.
Brown sugar
Adds gentle sweetness that balances the salt and supports browning in the cure.

The step that matters

Rubbing the cure evenly over the beef. Salt and saltpetre preserve the meat by drawing out moisture and slowing bacterial growth. Uneven coverage leaves some areas under-cured, so the cure must be measured accurately and rubbed in fully each day.
