Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Browning develops savory flavor, and slow stewing makes the meat tender.
Carrots
Add sweetness and body to the gravy as they soften during stewing.
Onions
Release sugars as they cook, adding sweetness and depth to the gravy.
Flour
Starch thickens the cooking liquid into a gravy.

The step that matters

Browning the beef. Searing the meat in a hot pot, turning it until nicely browned, builds deep flavor through the Maillard reaction. Crowding the pot or stirring too early stops browning and leaves the meat grey and flat.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, pepper, flour):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
