Veal Pot-pie

Ingredients

Directions

Prepare the veal

  1. Place the veal in a pot with 1 quart of water for every 5 pounds of meat.

  2. Bring to a boil over a strong fire, skimming off the scum. Add a teacup of cold water to help remove more scum, then boil hard.

  3. Season with pepper and coarse sea salt, remembering the crust will absorb some seasoning.

Make the crust

  1. For the crust, mix 3 pints of flour with 2 ounces of butter and a little salt.

  2. Add enough milk to form a soft dough, knead well, and let rise until light.

  3. Knead again and let it rest for 1 hour in winter or 30 minutes in summer.

  4. Optionally, add ½ teaspoon of baking soda during the second knead in summer.

Assemble and simmer

  1. Cut the crust into equal pieces without rolling or molding, and lay them on top of the meat.

  2. Cover the pot tightly and let it simmer for 1 hour, ensuring no steam escapes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which becomes tender during long, gentle simmering.
All-purpose flour
Forms the structure of the crust, which holds its shape and absorbs the broth.
Butter
Adds fat to the dough, tenderizing the crust and enriching its flavor.
Milk
Hydrates the flour into a soft dough that can be kneaded and risen.
Baking soda
Helps the summer crust rise and lighten when used as an optional addition.

The step that matters

Covering the pot tightly during the simmer. Trapping steam keeps the liquid and heat steady so the veal cooks evenly and the crust steams through without drying out.
