What each ingredient does

Coral and spawn
Provides rich lobster flavour and a thick, colourful body to the sauce.
Butter
Adds fat for a smooth, rich mouthfeel and carries the flavour of the sauce.
Water or vinegar
Supplies liquid to loosen the sauce, with vinegar adding a sharp acidity.
Made mustard
Adds sharp, pungent flavour that balances the richness of the butter and coral.

The step that matters

Stir the sauce until smooth. The butter must be melted into the liquid and coral mixture gently so it emulsifies. If the sauce is overheated or left to stand, the butterfat can separate and the sauce turns greasy and grainy.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):

  1. Mustardthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Potatofits less well

Fit is the average pairing score against lobster, butter, vinegar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
