Crab Salad

Ingredients

Directions

Prepare the crab

  1. Boil the crabs for 25 minutes, then drain and let them cool.

  2. Remove the upper shell and tail, then break apart the remainder and pick out the meat carefully.

  3. Include the meat from the large claws and the creamy fat from the upper shell.

Assemble and serve

  1. Line a salad bowl with the small white leaves of the lettuce.

  2. Add the crab meat and top with mayonnaise, crab claws, hard-boiled eggs, and little mounds of cress leaves.

  3. Mix the cress leaves with the salad when serving.

What each ingredient does

Crabs
Provide the main protein; heat firms the flesh so it holds together when picked.
Mayonnaise
Adds fat and moisture, binding the crab meat into a creamy, rich salad.
Lettuce
Forms a crisp, cool base that contrasts with the rich crab meat.
Hard-boiled eggs
Their firm, mild richness adds body and texture to the salad.

The step that matters

Boil the crabs for 25 minutes, then cool them. Heat sets the proteins in crab flesh, so the timing matters: overcooking toughens and dries the meat, while cooling stops the cooking so the meat stays tender and easy to pick.

Swap the lettuce

How well each one fits the dish's main ingredients (crab, egg):

  1. Asparagusfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Lettucethe original

Fit is the average pairing score against crab, egg. Candidates are from the same food group and used in at least 100 recipes.
