What each ingredient does

Tart apples
Provide the bulk, pectin and tart flavour that form the ketchup's body.
Sugar
Adds sweetness and, with long boiling, helps thicken and preserve the mixture.
Vinegar
Adds acidity that balances the sweetness and helps preserve the ketchup.
Onions
Contribute savoury depth and moisture that softens into the sauce as it cooks.

The step that matters

Boil for one hour. The long boil evaporates water and concentrates the apple pulp, sugar and vinegar into a thick sauce. Stopping early leaves it thin and less stable on the shelf.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits better
  4. Onionthe original

Fit is the average pairing score against apple, sugar, pepper, clove, mustard, cinnamon, vinegar. Candidates are from the same food group and used in at least 100 recipes.
