Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Forms the tender interior that contrasts with the crisp coating.
Bread crumbs
Form a crisp, golden crust when fried in butter.
Beaten egg
Acts as a binder so the crumbs stick to the slices.
Butter
Conducts heat to brown the coating and adds rich flavor.

The step that matters

Drying the slices after soaking. Excess water left on the eggplant turns to steam in hot butter, which can loosen the crumb coating and make the slices greasy rather than crisp. Patting them dry helps the coating adhere and brown.
