Cheese Cream Toast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the toast

  1. Toast the slices of stale bread.

  2. Cover the toasted bread with grated cheese.

Make the cream sauce

  1. In a saucepan, bring 1 pint of milk to a boil.

  2. Mix 2 tablespoons of plain flour with a little cold water, then stir into the boiling milk.

  3. Cook the mixture until it thickens.

  4. Season the thickened mixture with coarse sea salt and butter.

Bake and serve

  1. Place the toast and cheese in a 400°F (200°C) oven for 3-4 minutes.

  2. Pour the cream over the toast and cheese before serving.

What each ingredient does

Stale bread
Forms the base that holds the cheese and cream sauce.
Grated cheese
Melts over the toast, adding richness and savoury flavour.
Milk
Forms the liquid base of the cream sauce.
Plain flour
Thickens the milk into a smooth sauce as it cooks.
Butter
Adds fat and richness to the finished sauce.

The step that matters

Cooking the flour mixture until it thickens. Flour must be fully cooked in the hot liquid so the starch swells and thickens the sauce. Stirring it in as a smooth slurry first helps prevent lumps from forming.
