Welsh Rarebit

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the topping

  1. In a mortar, mix the grated cheese, egg yolks, grated bread, butter, mustard, salt, and pepper until well combined.

Assemble and bake

  1. Toast the slices of bread and remove the crusts.

  2. Cut the toasted bread into shapes and spread the cheese mixture thickly on top.

  3. Place the prepared bread in a 400°F (200°C) oven until hot and slightly browned.

Serve

  1. Serve immediately while hot.

What each ingredient does

Dry cheese
Melts into the sauce and provides the main savoury flavour and body.
Egg yolks
Emulsify with the butter and cheese, helping the topping set thick and smooth.
Grated bread
Adds body to the mixture and helps it hold together on the toast.
Butter
Adds richness and fat, keeping the mixture smooth and spreadable.
Made mustard
Adds sharp, tangy flavour that cuts through the richness of the cheese.

The step that matters

Baking until hot and slightly browned. Egg yolks in the topping can curdle or dry out if overheated, so the bake should be just long enough to heat through and lightly brown the cheese.
