Sardine Sandwiches

Ingredients

Directions

Prepare the sardines

  1. Drain the oil from the sardines and place them in hot water for a few minutes to remove grease.

  2. Pour away the water and dry the sardines with a cloth.

  3. Remove the skins and pound the sardines in a mortar until they form a paste.

Assemble the sandwiches

  1. Add pepper, salt, and tiny pieces of lettuce, then spread on pre-cut sandwiches.

  2. Alternatively, chop the sardines finely, add a few drops of lemon juice, and spread between buttered bread or cold biscuits.

What each ingredient does

Sardines
Provide the main filling and rich, savoury flavour of the sandwich.
Lemon juice
Adds a bright acidity that cuts the richness of the oily fish.
Buttered bread or cold biscuits
Provide the base that holds the filling and adds soft texture and fat.

The step that matters

Draining and drying the sardines. Soaking in hot water and drying removes surface oil and grease, which keeps the paste from tasting heavy and helps it spread without making the bread soggy.

Swap the lettuce

How well each one fits the dish's main ingredients (pepper, bread, lemon):

  1. Capsicumfits better
  2. Spinachfits better
  3. Tomatofits better
  4. Lettucethe original

Fit is the average pairing score against pepper, bread, lemon. Candidates are from the same food group and used in at least 100 recipes.
