Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Shape the braid

  1. Prepare the wheat bread dough as usual.

  2. Divide the dough into three equal pieces, each about the size of a pint bowl.

  3. Dust a surface with flour and roll each piece into a 12‑inch long rope, tapering the ends.

  4. Place one rope on a baking tin and attach the ends of the other two ropes to it, braiding them together.

  5. Press the ends together to seal the braid.

Finish and bake

  1. Brush the top of the loaf with milk.

  2. Let it rest for 10 minutes, then bake in a 400°F (200°C) oven for nearly an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat bread dough
Gluten network forms during kneading and proofing, giving the loaf its structure and chewy crumb.
Milk
Milk sugars and proteins brown in the oven, giving the braided top a golden colour and soft crust.

The step that matters

Press the ends together to seal the braid. Loose rope ends can separate as the dough rises and expands in the oven. Firmly pressing them together anchors the braid so it keeps its shape while baking.
