Variegated Cakes

Ingredients

Directions

  1. Cream the butter and powdered sugar together until light and fluffy.

  2. Add the milk and bitter almond flavoring, mixing well.

  3. Gently fold in the whipped egg whites and flour until just combined.

  4. Divide the batter into three bowls.

  5. Extract spinach juice by bruising spinach leaves in a muslin bag and squeezing.

  6. Color one portion of the batter with spinach juice, another with cochineal, and leave the third white.

  7. In small, round pans, layer the colored batters, stirring lightly as you add each color.

  8. Place the white batter between the pink and green for better color contrast.

  9. If using, pound pistachio nuts and add to the green batter for flavor.

  10. Ice the sides and top of the cakes once baked.
