Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable dessert as it cools.
Egg whites
Whipped, they add air and a light, fluffy texture to the set dessert.
Grated chocolate
Provides the chocolate flavour and colour of the dessert.
Sugar
Sweetens the dessert and balances the bitterness of the chocolate.
Milk
Forms the creamy liquid base that the gelatine sets in.

The step that matters

Beat in the whipped egg whites. Egg whites must be whipped to soft peaks and folded in gently after the mixture cools slightly. If the mixture is still very hot, it can deflate the foam and reduce the airy texture.
