Why it works: Almond and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 15,679 recipes. Both carry 1-penten-3-one, which smells fish, pungent. The science ↓
Almond Macaroons
Ingredients
Directions
The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Make the paste
Blanch the almonds and pound them into a paste.
Add the sugar and beaten egg whites to the almond paste.
Mix everything together with the back of a spoon.
Shape and bake
Roll the mixture into balls about the size of a nutmeg.
Dust sugar over the top of each ball.
Place them on a sheet of paper at least 1 inch apart.
Bake in a cool oven at 300°F (150°C) until light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sweet almonds
- Form the bulk of the paste, giving the macaroons their dense, chewy body and nutty flavour.
- Egg whites
- Bind the almond paste and lighten it, helping the balls hold their shape while baking.
- White sugar
- Sweetens the macaroons and helps the surface brown during baking.
The step that matters
Bake in a cool oven until light brown. A low oven dries the outside gently while keeping the inside soft and chewy. Baking too long or too hot browns the surface quickly and leaves the macaroons dry and hard.
Swap the almond
How well each one fits the dish's main ingredients (sugar, egg):
- Pecansfits about as well
- Almondthe original
- Chestnutfits about as well
- Milletfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
