Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding base

  1. Wash the tapioca and let it stew gently in the milk on low heat for 15 minutes, stirring occasionally.

  2. Allow the mixture to cool, then mix in the butter, sugar, and well-beaten eggs.

  3. Add the vanilla or bitter almond flavoring.

Bake

  1. Butter a baking dish, pour in the pudding mixture, and bake at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it stews, giving the pudding its body.
Milk
Forms the liquid base that the tapioca swells into and sets during baking.
Eggs
Add structure as they set in the oven, firming the pudding and enriching it.
Butter
Adds richness and a smooth, tender mouthfeel.
Sugar
Sweetens the pudding and contributes to its browning in the oven.

The step that matters

Cooling before adding the eggs. If the mixture is still hot when the well-beaten eggs go in, they can scramble or cook unevenly instead of blending smoothly into the custard. Cooling first keeps the texture silky and the eggs evenly set during baking.
