Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Cream the warmed butter and sugar together until light.

  2. Add the grated nutmeg and gradually stir in the beaten egg yolks and whites.

  3. Add your choice of flavoring and mix well.

Assemble and bake

  1. Butter a deep dish and line it with puff pastry.

  2. Pour the mixture into the lined dish and bake at 350°F (175°C) for 30 minutes.

  3. Prepare a meringue for the top and brown it in the oven.

Serve

  1. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh butter
Creams with sugar to give the filling richness and a tender, smooth texture.
Sifted sugar
Sweetens the filling and helps create a light, creamed base.
Eggs
Provide structure and set the filling as it bakes, with whites adding lightness.
Puff pastry
Forms a crisp, flaky lining that holds the filling in the dish.

The step that matters

Browning the meringue. Meringue needs enough oven time to brown without overbaking the filling beneath. Watch it closely, since egg whites can scorch quickly once the sugar caramelises at the surface.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, egg, vanilla):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Peppermintfits less well

Fit is the average pairing score against butter, sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
