To Preserve Berries Whole
Ingredients
Directions
Prepare the fruit
Buy fruit that is not too ripe and pick over immediately.
Wash the berries if absolutely necessary and fill glass jars about two-thirds full.
Make the syrup and fill the jars
In a preserving kettle, combine 1 pound of sugar and 1 cup of water for every 2 pounds of fruit, and bring to a slow boil.
Pour the syrup over the berries in the jars, filling them to the brim.
Process and store
Place the jars in a pot of cold water on the stove and bring the water to a boil until the fruit is scalding hot.
Remove the jars and seal them tightly while hot.
Store in a cool, dry place.

What each ingredient does
- Berries
- Provide the fruit that is preserved whole, with flavor and texture kept intact in the jars.
- Sugar
- Sweetens the fruit and, dissolved in water, forms a syrup that helps preserve its flavor and shape.
- Water
- Dissolves the sugar into a syrup that surrounds the berries and fills the jars.
The step that matters
Filling the jars to the brim with syrup. Syrup filled to the brim leaves little air at the top of each jar, which helps limit air contact and spoilage, and helps the fruit stay covered by liquid during heating.
