What each ingredient does

Jamaica rum
Provides the spirit base and the main alcoholic character of the punch.
Lemons
Supply acidity and aromatic oil from the peel, balancing the sweetness.
Loaf sugar
Adds sweetness that balances the acidity of the lemon juice.
Boiling milk
Softens the punch's sharp notes and clarifies it as the milk proteins curdle and settle.
Nutmegs
Contribute warm, aromatic spice when infused into the rum.

The step that matters

Adding the boiling milk. Milk added to acidic lemon juice curdles, and the curds carry impurities down as they settle, which clarifies the punch. Milk that is not hot enough, or poured in too fast, may not curdle cleanly and leaves the punch cloudy.

Swap the lemon

How well each one fits the dish's main ingredients (rum, milk, sugar, nutmeg):

  2. Figfits better
  3. Coconutfits better

Fit is the average pairing score against rum, milk, sugar, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
