Why it works: Green tea and rum work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 60 recipes. Both carry sotolon, which smells curry, maple. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Green tea
- Provides the base liquid and a mild bitter tannin note that balances the sugar.
- Jamaica rum
- Adds strength and a rich aroma while the punch is chilled and diluted.
- Cut loaf sugar
- Sweetens the punch and softens the sharp acidity of the lemon.
- Lemons
- Supply acidity and aromatic oils from the peel that flavour the punch.
The step that matters
Add the rum only once the tea is cold. Alcohol is volatile and its aroma fades when heated, and hot liquid can drive off flavour, so letting the tea cool before adding the rum keeps the rum's character in the punch.
Swap the lemon
