What each ingredient does

Eggs
Yolks enrich the batter, and whipped whites lighten it for a tender, airy texture.
Flour
Provides the structure that holds the batter together when fried.
Milk
Hydrates the flour and gives the batter its pourable body and soft crumb.
Oil
Adds fat for richness and helps the fritters brown and crisp in the pan.
Baking powder
Releases gas during frying, causing the fritters to rise and become lighter.

The step that matters

Add egg whites just before frying. Beaten egg whites deflate over time, so folding them in just before frying keeps the batter light and helps the fritters puff rather than turn dense.

Swap the cinnamon

The recipe marks cinnamon as optional. How well each one fits the dish's main ingredients (egg, milk, flour, butter, white pepper, fish, cream):

  1. Nutmegfits better
  2. Tarragonfits about as well
  3. Parsleyfits about as well
  4. Cinnamonthe original

Fit is the average pairing score against egg, milk, flour, butter, white pepper, fish, cream. Candidates are from the same food group and used in at least 100 recipes.
