Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the main structure that holds the waffle together as it bakes.
Baking powder
Releases gas during baking so the batter rises and becomes light.
Eggs
Egg whites trapped by beating add lift, while yolks enrich texture and help bind the batter.
Rich milk
Adds moisture and tenderness, and its milk sugars help the waffle brown.
Butter
Adds richness and flavour, and helps the waffle crisp and brown on the outside.

The step that matters

Fold in the stiffly beaten egg whites. Egg whites hold air only when beaten to stiff peaks. Folding gently, rather than stirring, keeps that air in the batter so the waffles rise light instead of dense.
