Butter Cakes

Ingredients

Directions

  1. Sift flour, baking powder, and salt together.

  2. Cream the butter until soft and creamy.

  3. Gradually add sugar, creaming it with the butter. Add egg yolks alternately with sugar until fully combined.

  4. Add vanilla extract and beat well.

  5. Add one-third of the dry mixture and one-third of the milk, beating well.

  6. Repeat with another third of the dry mixture and milk, then beat again.

  7. Add the remaining dry mixture, then enough milk to make a soft drop batter.

  8. Beat egg whites to stiff peaks and gently fold into the batter without breaking the air cells.
